Rolling dough straight on the counter means flour on every surface, dough that sticks anyway and a crust that comes out a different size each time.

This food-grade silicone mat gives you a clean nonstick surface to work on. Dough does not cling to it, so you need far less flour, and printed rings and rulers show you when a pie crust or pizza base has reached the size you want. The underside grips the counter so the mat stays put while you knead.

At about 20" × 16" (50 × 40 cm), it fits pastry, bread dough and fondant. When you finish, wipe it down and roll it up to store.
